During my last trip to San Pedro island in Belize I learned about a local law they have regarding meat handling at restaurants. They require to leave the bones in the meat so people know what are they eating. I guess they have had some issues in the past. During the same trip, I had some friends over for dinner and I served a traditional Panamanian dish called "chicken and rice" with -no bones-, ...they looked at me shocked because of I had done---I felt somehow like a criminal :) At the end we all ate the delicious rice and had a great time.
