And what’s even better is that it tastes delish.
For each person allow two egg yolks and two teaspoons of sugar (I tend to use vanilla sugar). You’ll also need a splash of Marsala. An Australian substitute is Boronia.
I usualy use a bain marie and start by whisking the sugar into the egg yolks over the heat. I then add a few splashes of the booze and continue whisking – perversly always by hand but then it’s my gym substitute – until it is a custard-like consistency. It is important to ensure it doesn’t curdle. If this happens it sometimes can be rescued from turning into scrambled egg with a few drops of cold water.
Serve in a wine glass.
