Lifehacking: dogs and trifle

Yes, dogs and trifle do mix. Tskui (B&W) and Mungo (tan) are my essential kitchen assistanats, licking out sticky bowls and help save water in general.
Today I’m making good on one of my five food challenges for 2006. I’m making Tiramisu, or Italian trifle.
I checked out Maurzio Terzini (the restaurateur behind the Icebergs in Bondi) in Something Italian. 1.2 litres of espresso, 1kg of savoiardi sponge fingers seemed a little over the top. Plus, I refuse to allow kahlua (pronounced koala) into the house.

Here is my variation:

1. Soak the sponge fingers in a couple of hundred ml of coffee. I used greek coffee, the fine grains adding to the overall flavour. A couple of dashes of Marsala are added. Add a couple of splashes of brandy or grappa. Leave for a couple of hours or until soft.

2. I had no marscapone but left over ricotta, about 150g. I mixed it with some yoghurt and cream. Two egg yolks are whisked with 90g home made vanilla sugar and folded into the cheese. Two egg whites are whisked and folded in.

3. Use up the over ripe fruit bought from the Farmers’ market.

4. Layer fruit (blackberries), sponge fingers, cheesy stuff, grated 70% chocolate (or cocoa powder), more fruit (strawbs), sponge, cheesy stuff and more chocolate.

5. Chill for a couple of hours.

6. Call upon hounds hanging around your ankles to clean dishes.

Yum – good on you for getting into the food challenge con gusto! I’ve used amaretto with the coffee soaking sponge finger mix with good effects. (and ps thanks for including my blog in your Aussie food blog list!)

I should get some Amaretto – I just used what I had in the cupboard Fundador Spanish brandy.

Paz, as you’ve probably seen I’ve discovered the food facist within. There are only so many drinks I can accomodate and I just don’t like it. If i want coffee, I’ll drink it. If i want alcohol I’ll go for a clean spirit like vodka, Gin, Havana Club and especially grappa. If I want coffee and alcohol I’ll have Grappa.

The food facist declares: milky alcoholic drinks are for kids.
