I can’t imagine Anna Pavlova eating that great New Zealand dish named after her. There are some truly horrifying examples of this magnificent pudding here in the pretender to the home of his dish, Australia.
At Christmas, we bought one on the Gold Coast. It was nearly the size and thickness of a tyre and seemed to have been made of a pure white fluff. There was none of the crunchiness and stickiness that for me makes a great Pav.
My first Pav was topped by tinned guava in England. I was hooked and when I came of age my mother baked me a 21 Pavlova salute. Sweet.
This dish is my knee jerk reaction to leftover egg whites, this time post béarnaise.
Oh and not to forget Sugar High Friday hosted by Andrew over at Spittoon Extra. The problem is that a wagon wheel sized pav is too much for two.
And so it was time to experiment and discover exactly how versatile my Vivienne Westwood style shiny silicon rubber muffin thingy was.
They worked a treat. I mashed up some old strawberries with some white rum (out or Kirsch) and crème frais and added some ripe berries.
This bit-sized pavs really are the business and now I have a stack on them in the freezer to liven up my weekday lunches. Greedy moi?

Mini Pavs! Yums! I’ve tasted quite a few mini pavs here in Singapore (usually from chi chi restaurants) and they test like crap – meringue overload. Man, now I really have cravings …
Finally a man who speak’th the truth!
I’m keen to try this too with the silcon moulds now, since I often attempt mini pavs, but they always turn out a tad bigger than I had hoped for.
No one complains though!
Bron, I speak my truth which I think means I spend too much time wrestling with post modern concepts. At least it seems my truth is somewhere nears yours.
MM. The overload gets me too with so much. Why do people have to make cakes and sweets thetickness of a tyre. And why are you eating that crap with the amazing food you have in Singapore. I was stunned by how cheap and good it was when I was last there. BTW I just ate another tonight
