These are some of my favourites with made with corn (excluding polenta, which is another story) for Weekend Herb Blogging#40 (devised by Kalyn) this month hosted at My life as a reluctant house wife.
1. Simply boiled but as a healthy alternative to butter try extra virgin olive oil, the best you can find. Sprinkly with salt crystals and some fresly ground (cracked) pepper.
2. Chicken and sweetcorn soup. The chinese variety with swirly bits of eggwhite.
3. Crab and sweetcorn stock. As above but I tart up the chciekn stock with crab shells. I uually use blue swimmers.
4. Corn fritters. I have to say I am in two minds about makin these as they are so good at a local café, Mart 130.
5. Roasted in the skin on a BBQ.
6. Corn Salsa. Strip the nuggets off with a sharp knife. Add chopped tomato, coriander, salt, pepper and olive oil. No hard and fast recipe here. But this is great with Chilli and other tex or mex inspired dishes.
7. I’d love to hear of any great corn ideas that I’m missing out on.

Ed, you must try the corn fritters at Replete Providore… they have upgraded them and I reckon they are now better than Mart 130’s…
Can’t wait if they are better than Mart’s. The downside seems to be the trip to Hawthorne although I suppose I can make a morning of it and visit Streetwise the Apple Mac supermarket. Cheers.

I made lots of corny dishes this weekend
You’ve covered all my corn favs except sweetcorn polenta…soft polenta made with milk with chunks of sweet corn kernals to freshen things up..
Yumm! I love that picture of the ear of corn. I want to bite into it. I love a dish called Fried Corn in my family. It’s not fried at all, we cut the kernals off freshly picked sweet corn and saute it in butter. My Southern grandmother liked to toss crumbled crisp bacon in hers.
Great corn photo. I actually had some corn fritters in San Francisco this weekend and they were fabulous.
I like these lists you come up with! One favorite with corn is something I ate at our club, a burnt corn salad- I guess the corn is char grilled and then taken off the cob-tossed with some sauted peppers -yellow and red, some red onions, salt, pepper and lemon juice. It tasted out of this world.
What a wonderful shot! I love corn! It’s one of the best things about summer. ;-)) I have a nice corn on the cob recipe on site (index section). As a matter of fact, I had some corn on Saturday. Yum, yum, yum!

At the cafe in the Rec Centre, at Vic Uni (NZ) circa mid ’80’s - real grainy bread toasted, with a generous dollop of creamed corn and lashings of cheese grilled to perfection.
*sigh* One of the things I miss most in this now dairy free body.

Interesting tips to use corn.
{Corn can be paired with a variety of veggies and soups.
But I remember corn to be a part of a shrimp bucket.
{Pastry pockets stuffed with prawn and corn stuffing. It really opened my taste buds to an array of flavors.
The stuffing had simple sauteed prawns in onions, tomatoes, green chilies and seasonings.
