Packed into the new recital centre in Melbourne were a star-studded audience to hear Neil Perry, Heston Blumenthal and Thomas Keller discuss “A new approach to cooking”. Sydney chef Tony Bilson was taking notes sitting next to the legendary Cheong Liew. I think I spotted Karen Martini and Martin Boetz. The audience was also packed full of a who’s who of local food media as well as few bloggers and quite possible a few more food twitters.
We were all given a copy of the manifesto for the new approach to cooking signed by Blumenthal (his signature looked like a flamboyant rendition of H BLT) and Keller.
This is a really rough recording and I haven’t the time tonight to transcribe it or edit it. But for the benefit of all of you who couldn’t make it today simply because it sold out, it was too expensive or you live in a swamp such as Elwood or another continent it is posted here. It runs to about one hour and fifteen minutes.

Unfortunately the only thing I can hear clearly on the recording is the applause! Hope you will transcribe it because it was a very interesting insight into these to notable characters moderated, in Aussie style, with humour and aplomb by Neil Perry

Yes, I do really know two from to. Equals zero doesn’t it!!
I recorded this too, I need to get it into garageband and see if I can make it clearer, and I was in the front row he said boasting. I also recorded Shanon and Raymond the day before.
